The Japanese equivalent of a chef's knife, the Santoku benefits from a wide, scalloped blade which reduces friction when cutting through food and which can be used to scoop up cut ingredients to transfer to a bowl or cooking vessel. Ideal for fine chopping but strong and sizeable enough to take on the tasks of a small cleaver.
