Carrot Fairy Cakes

Ingredients
200g/8oz Soft Brown Sugar
200g/8oz Plain Flour
3 Medium Eggs
3 Medium Carrots
1 Cup Sultanas
4 tbsp Sunflower Oil
2 level tsp Baking Powder |

Preparation Method
Preheat the oven to 220C.
Put the sugar, eggs and oil into a large bowl and beat and whisk for 3 minutes, until the mixture has lightened in colour and is bubbly.
Sieve the flour and baking powder into the bowl and fold in gently with a wooden spoon.
Mixed in the grated carrots and sultanas.
Put a large dollop of mixture into each fairy cake case.
Bake for about 15 mins until firm to the touch and golden brown.
