Steph’s Paella

Ingredients
- olive oil
- 2 med onions chopped
- 4 crushed cloves of garlic
- 150 grams(10 slices) chorizo
- optional saffron
- 400 g tin chopped tomatoes
- 100g/150g tiger prawns (frozen will do)
- 200g monkfish or any chunky fish/chicken
- 1 litre vegetable stock
- 2 handfuls per
person rice

Method
1. Fry onions and garlic then add chicken (if using chicken) 2. Add chorizo, tomatoes and saffron 3. If using fish, add this and also the stock and rice. Do not stir when
cooking, simmer 4. When fully absorbed leave off the heat with lid covering and allow to cool
slightly Tips
- You can substitute
chicken with pork and use any other fresh shell fish eg mussels, king prawns
etc
