Baked Courgette Gratin


Ingredients


3 large courgettes

1 garlic clove, chopped

8 cherry tomatoes, chopped

Handful of basil, shredded

Salt and Pepper

Olive oil

50g breadcrumbs

25g parmesan


 Baked Courgette Gratin
 

Preparation Method


Preheat the oven to 180c.

 

Slice the courgettes lengthwise and lay half in a shallow ovenproof dish.

Top with half of the garlic, cherry tomatoes, basil, some salt and pepper to taste and a drizzle of olive oil.

Repeat the layers with the remaining ingredients then top with the breadcrumbs and parmesan.

 

Bake for 30 minutes then serve.
