Ingredients 4 firm bananas Juice of 1 orange 40g unsalted butter 50g caster sugar 40ml rum 120g apricot jam Vanilla ice cream to serve |

Preparation Method Peel the bananas and slice in half lengthways.
Put the orange juice, butter and jam into a saucepan and bring to the boil. Add the bananas and heat through.
Warm the rum, pour over the bananas and ignite. Serve immediately with vanilla ice cream. |
