Bean Soup (Aka Starving Student Minestrone)


 

Ingredients

2 cans (16 oz) great northern beans (do not drain)

1 (13 ounce) can broth (I used vegetable, but chicken or beef would probably work, too) - you can also use stock cubes.

3 Cup  cut-up peeled fresh tomatoes or 1-1/2 lbs canned whole tomatoes cut up

4 cup macaroni or elbow macaroni

 

Salt and pepper,

Optional: 1 tsp dried sage, 1tsp dried thyme, 1/2 tsp dried oregano

 

 

 

Bean Pasta soup

 

Preparation method

 

In a saucepan, bring the broth to a boil.

Add macaroni and cook until almost tender.

Add the beans and the liquid in which they were packed.

Add salt and pepper. (and the herbs if you have some)

Continue cooking until the macaroni is done.

Serve hot and enjoy!
