Bombay Potatoes


                            

Preparation Method


Peel and cube 4 med potatoes and par boil for 5- 7 minutes. 

 

Dain and set aside.

 

Peel and dice 1 red onion, heat 2 tbsps oil in a large frying pan soften the onion, add 1 crushed garlic clove, 1 tsp chilli powder, 1 tsp ground coriander, 1 tsp turmeric  a good pinch of ground cumin and a grating of Root Ginger  or some mustard seeds if desired. 

 

Cook for a minute, add the potatoes stirring to coat in the spices, cook, adding a little more oil if necessary until the potatoes are a little crisp at the edges and piping hot. Alternatively place on a baking tray, drizzle with a little oil and roast for approx 15- 20 mins.
