Roast Loin of Pork with Honey & Mustard

Take a 2kg loin of pork and score the fat across the top. Rub the meat all over with 1 tbsp Dijon mustard mixed with 1 tbsp runny honey and 1 tbsp soy sauce. Place on top of a sliced red onion in a roasting tin and sprinkle with salt & pepper. Roast at 240 degrees C for 20 minutes then at 190 degrees C for 1½ – 2 hours until thoroughly cooked through.
