Sherried Potatoes

Mash 1.5kg cooked potatoes with 85g butter and 25g sugar. Add ½ tsp ground nutmeg, salt & pepper. Beat 2 eggs and add to the mash with 100ml medium sherry and juice and rind of 2 small oranges. Add 25g chopped almonds and bake at 190°C for 20 minutes.
