The Right Knife for the Job

Whilst we all have a favourite go-to kitchen knife, each style of knife is designed with a specific task in mind. We asked Michelin Star chef Tom Aikens to take us through how to get the best from each knife in your set.

Firstly always ensure you are chopping on a stable surface that won't slip such, as a wooden chopping board.

PARING KNIFE

The small but perfectly formed paring knife is used for intricate jobs such as peeling and paring. With its small, short blade you can work into tight corners and remove small blemishes in no time with this knife.

UTILITY KNIFE

The indispensable utility knife is a general-purpose favourite in many kitchens, due to its easy handling and manouvering. It excels at everyday tasks and is ideal for cutting small to medium sized vegetables.

SANTOKU KNIFE

Originating in Japan, the santoku knife has a scalloped blade with a flat edge. The scallops create air pockets which allow the slices to fall away from the blade with ease as you cut. This knife is great for cutting thin slices of vegetables such as courgettes, potatoes and cucumber.

CHEFS KNIFE

The classic cooks knife or chefs knife is used for a lot of larger vegetables, so anything from carrots to onions and you can do a really nice fine diced brunoise because the curved, wide blade is designed for rocking that allows you to safely cut at speed and is also useful for transferring your cut vegetables straight into the pot.

CARVING KNIFE

With a long, slim blade a carving knife is designed to make smooth cuts of meat and is fantastic for steaks and roasts. With a bit of finesse, you can also use a carving knife for filleting larger fish like salmon and seabass.

BREAD KNIFE

The bread knife with its serrated edge requires much less pressure to make a cut. It's designed for use with foods that are hard on the outside and soft in the middle, like crusty bread, softer vegetables like tomatoes and delicate items such as cakes, which can easily be crushed.
