Pork Loin with Sage & Garlic


4 garlic cloves, finely chopped
2 tablespoon fresh sage, finely chopped
1 1/4 teaspoons coarse salt
1/4 teaspoon ground pepper
1 tablespoon olive oil
1 x 1kg pork loin
1 tablespoon vegetable oil



Preheat oven to 200 degrees C.


Mix garlic, sage, salt, pepper and olive oil in a small bowl.


Rub mixture all over pork.  (If your meat has a thick layer of fat for crackling you may prefer to remove this and roast it separately.)

Place the meat in a large roasting tin then transfer to oven.

Cook for 25 minutes per 500gr approximately.

Remove from the oven and test the meat to ensure it is cooked through.  Allow the meat to rest for 20 minutes before serving.  Please note the juices should run clear or brown, not pink.
