Roast Turkey with Herbs




75g butter

2 cloves crushed garlic

Handful of finely chopped:

- Fresh thyme

- Rosemary

- Sage

A Generous sprinkling of black pepper and salt.

Preparation Method


Combine butter, garlic and herbs in a bowl and add seasoning.

Loosen the skin from the turkey breast and push the butter mixture under the skin as far as you can to ensure the entire breast is covered.


Rub any leftover mixture onto the outside of the turkey, particularly onto the legs and wings.


Place the turkey in a large, non-stick roasting tin and cover loosely with foil and cook in a preheated oven for approximately 20 - 30 minutes per pound at 180 degrees C. 


Remove the foil for the final half hour to allow the turkey to brown, ensure it is thoroughly basted first. 


Use a meat thermometer to check it is completely cooked and the juices run clear when the skin is pierced with a skewer.


Allow to stand for 30 minutes and then serve.
