Cider Baked Haddock


Ingredients


1 onion, chopped

1 small tin anchovy fillets, drained

125g button mushrooms

25g butter

150ml cider

Juice of 1 lemon

Handful dill, chopped

Handful coriander, chopped

Handful parsley, chopped

750g fresh haddock


Cider Baked Haddock 
 

Preparation Method


Preheat the oven to 180c.

 

Brown the onion, anchovy fillets and button mushrooms in the butter.

Add the cider, lemon juice, dill, coriander, parsley and haddock.

 

Cover and cook in the oven for 25 minutes.

Serves 4.
