Peach Gazpacho

Created exclusively for ProCook by Dan Pawson: Junior Masterchef, Yorkshire winner


500g very ripe peaches, diced

500g very ripe tomatoes, diced

15g sweet green pepper, diced

40g onion, diced

1 clove garlic, diced

30ml cider vinegar

50g olive oil

A pinch of salt      

A pinch of pepper

Mint leaves, to garnish


Place all of the ingredients, apart from the mint, in a blender and blitz until smooth. Season with salt and pepper, to taste, then strain through a fine sieve and refrigerate until needed.

When ready to serve garnish with fresh mint.
