4 Large Maris Piper Potatoes

Cooking oil

1L water




Preparation method

Set the oven to 180c and place a roasting tin with cooking oil inside to heat up.

Peel the potatoes and cut in half: if very large, cut into quaters or leave whole if they are small. Tip into a saucepan, cover with cold water, then bring to the boil. Set the timer and boil for 2-3 mins.

Drain the potatoes and then place the lid on top of the pan.  Hold firmly and shake the potatoes until their outsides are fluffy.

Remove roasting tin from the oven and carefully pour the potatoes into the hot fat.  Stir the potatoes so they are all covered and put in the oven for 45-55 minutes turning occasionally until they are golden brown and crispy
