Red Cabbage with Apples & Port

Wash and shred one large red cabbage and place half across the bottom of a large shallow casserole.  Mix 200g thinly sliced onion with 200g thickly sliced peeled cooking apples, 2 cloves of finely chopped garlic, 2 tbsp brown sugar and 1 tbsp caraway seeds and spread half over the cabbage.  Repeat both layers then pour over 3 tbsp white wine vinegar and 4 tbsp port.  Dot with butter and bake covered at 150°C for 3 – 3½ hours.
