Red Onion Marmalade

Melt 25g butter, stir in 350g chopped red onions and 1 tsp fresh thyme and soften for about 10 minutes. 

Add 55ml red wine vinegar and 225ml red wine, bring to a gentle simmer and add salt and freshly milled black pepper. 

Simmer with the lid off for 50 minutes – 1 hour until the liquid has evaporated.  Reheat gently before serving.
