Roasted Red Peppers


Halve and de-seed 2 large red peppers.  Combine 50g fresh breadcrumbs with 50g chopped feta, 25g pinenuts, 8 quartered cherry tomatoes, handful of  chopped basil leaves, salt & pepper.  Fill each pepper half with the mixture, drizzle with olive oil and bake for 25 mins at 180°C.
