Spicy Spanish Potatoes


 

Ingredients

  • 1 onion. peeled & chopped
  • 1 lge red chilli, finely chopped
  • 2 cloves garlic. crushed
  • 4 tomatoes. chopped
  • 8 medium potatoes, peeled and chopped into quarters
  •  olive oil
  •  salt and pepper
  •  chopped parsley

Spicy Spanish Potatoes

 

Method

 

1. Preheat the oven to 200°C, gas 6. Roast the potatoes and green pepper in a couple of tablespoons of olive oil with salt and pepper.


2. Put 2 tablespoons olive oil in a pan and fry the onion, chilli, garlic and tomatoes, covered, for 5 minutes. Stir well and check the seasoning.


3. Spoon the tomatoes over the potatoes and return to the oven for another 10 minutes. Garnish with the parsley.
