Swamp Monster Pie


Ingredients

600ml Double Cream

300g Cream Cheese

397g Condensed Milk

Zest and Juice of 6 Limes ( the darker in colour the better)

38ml bottle Green Food Colouring

300g Digestive Biscuits

100g Unsalted Butter

 

To Decorate

2 Slices of lime

Some lime zest mixed with caster sugar

20 Chocolate Chips

Spooky gummy sweets or caterpillars and worms


Preparation Method

Break the digestive biscuits down in a bag rollover or thump down with a rolling pin (ProCook Marble rolling pin is good for this) until biscuits are all in a fine crumb.

 

Heat the butter in a pan, so that it is all melted and then take off the heat. Add the biscuits to the butter and coat evenly.

Smooth the mixture out across the bottom of a 26cm ProCook Non stick spring form cake tin and chill until base is set slightly.

 

In a large bowl (The largest of the ProCook set of 3 Bowls) whisk up the double cream until forms stiff peaks

 

In a medium bowl (ProCook set of 3 mixing bowls are ideal for this) whisk up the Cream cheese with the condensed milk until all the mixture is combined.

 

Add the lime juice, Zest and food colouring to the mixture and mix well until all the food colouring is evenly mixed in.

 

Fold this mixture into the cream until mixed in and colour is evenly spread.

 

Line a small basin (the smallest of the ProCook Mixing Bowls) with cling film and put mixture into it tinso that it is ½ - ¾ way up the bowl and chill for 1hr.

 

Once you have done this smooth the rest of the mixture over the top of the biscuit base and using a palette knife or spatula to smooth the top. Put in the fridge to chill for an 1hr.

 

Once you have left this take both parts out of the fridge and check they have set properly, if they have then remove the cling film from the bowl and place on top of the pie where ever you think it will look effective. Usually in the middle of the pie.

 

This will then look like a hill or mound in the middle of the cake take a palette knife or spatula and just round the edges of the mound smooth it down so both are together and no gaps underneath.

 

Once this has been done you then need to decorate it and leave to set in the fridge.

 

To Decorate Take the slices of lime and place them towards the top of the mound for the eyes, place the chocolate chips in the shape of a mouth and a small group of chocolate chips for the nose.

 

Sprinkle all over the top the lime zest as this will look like algae on a swap. Add the worms and caterpillars.
