This super easy beetroot hummus recipe is quick to make and packed full of delicious veggies for incredible flavour.

A perfect dip, side dish or appetiser, this super creamy and smooth hummus pairs wonderfully with flat bread, pita, crackers, or can be dolloped on top of a fresh salad for a light lunch.

What you'll need...

  • 1 can chickpeas, drained and rinsed
  • 2 medium beetroots, cooked and cut into quarters
  • 1 medium lemon, only the zest and juice
  • 2 cloves garlic
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • ½ tsp ground cumin
  • ¼ tsp salt

Method

  1. Place the chickpeas, beetroot and garlic into a food blender and process for 1 minutes until ground and blended. Add the remaining ingredients and process again until creamy – the texture should be slightly grainy. If the hummus is too thick and you wish to thin it out, add more tahini until you reach your desired consistency.

  2. If you desire, pan fry some chickpeas and leave to the side until later.

  3. Scrape the beetroot hummus into a serving bowl and top with the pan-fried chickpeas and a drizzle of olive oil. Sprinkle with additional salt if you wish. Serve immediately or refrigerate in an airtight container if you are not serving straight away.
