If you’re looking for the perfect canape to serve this festive season, our brie and cranberry parcels are sure to impress. Each parcel brings a taste of Christmas in each bite with its creamy brie centre and filo pastry. Add chestnuts for extra sweetness.

Bake in a muffin tray

Serves 18

Time 30 - 40 minutes 

Ingredients

6 sheets filo pastry

75g melted butter

4 tbsp cranberry sauce

100g brie, cut into cubes

120g chestnuts, finely chopped and toasted

Poppy seeds, optional

Brie and Cranberry Parcels

Method

1. Preheat the oven to 200C / 180C fan / gas 6. Line two baking sheets with baking parchment.

2. Unravel a sheet of filo pastry onto a chopping board, covering the remaining filo with a damp tea towel (this keeps it from drying out). Brush melted butter across the filo sheet and cut into squares that’ll fit into the shallow muffin tray. Place each at a slight angle to the one underneath, forming a star shape.

3. Spoon cranberry sauce and place a piece of brie and, if you wish, toasted chestnut on top. Sprinkle some poppy seeds if you desire.

4. Bake for 10 - 15 minutes or until golden brown. Leave to cool on a wire rack and serve warm with an extra helping of cranberry sauce.
