Lovely in colour and delicious in flavour, our matcha ice cream recipe has a delicate taste and pairs perfectly with your favourite fruit.
This matcha ice cream recipe is quite straight-forward to follow and makes for a refreshing treat, especially when it’s a warm, summer’s day. Serve on its own in a bowl, a waffle cone or alongside tropical fruits like mango.
What you'll need...
- 500ml full fat milk
- 100ml double cream
- 3 egg yolks
- 100g sugar
- 15g matcha powder
- Fruit, to serve
Method
Put the milk and cream in a saucepan over a medium heat and bring to a boil. Remove from the heat.
In a large mixing bowl, cream together the egg yolks, sugar and matcha powder until thickened (approximately a few minutes). Gently pour in the hot milk and cream mixture, continuously stirring until everything is combined.
Pour the mixture back into the saucepan over a medium-low heat. Cook for 10-12 minutes while continuously stirring until the mixture is thick enough to coat the back of a spoon. Sieve into a clean bowl and allow to cool.
Churn the mixture in an ice cream maker, following its instructions. Once churned, freeze for 4-6 hours, but ideally overnight before serving. Serve exactly how you like it – in a bowl, with a waffle cone or alongside fresh fruit.
