Our peanut butter overnight oats is a healthy yet indulgent breakfast or brunch that only requires 5 ingredients.

Prepare our vegan overnight oats the night before and leave to soak overnight, so you can enjoy a delicious and creamy jar of overnight oats in the morning. If made in a jar, you can also take it to work for a quick and easy breakfast on-the-go.

What you'll need...

  • 130ml of dairy-free milk (oat, almond, soy, coconut)
  • 50g rolled porridge oats
  • 1 tsp maple syrup
  • 1 tbsp peanut butter
  • 1 tbsp chia seeds
  • Sliced banana, optional
  • Blueberries, optional

Method

  1. Add the dairy-free milk, chia seeds, peanut butter and maple syrup into a mason jar and stir to combine. Avoid overmixing the peanut butter – it does not need to be completely mixed with the plant milk. 

  2. Pour in the rolled porridge oats and stir until covered. Lightly press down the oats to ensure all oats have been immersed in the plant milk.  

  3. Cover the jar with a lid and place in the refrigerator overnight to soak. 

  4. The next day, remove from the refrigerator and add your desired toppings. We enjoy sliced banana and chia seeds, but strawberries or blueberries also pair well. You can choose you favourite toppings, however!
