Pairing perfectly with Christmas dinner and wintery roasts, this braised red cabbage recipe brings a lovely, sticky texture to the table. A delicious side dish to enjoy throughout the colder months.

What you'll need...

  • 1kg red cabbage, quartered and finely shredded
  • 2 Bramley apples, peeled and chopped
  • 50g light brown soft sugar
  • 75ml red wine vinegar
  • ½ tsp ground mixed spice
  • 1 tbsp butter (or vegan butter to make it plant-based)
  • Salt and pepper, to taste

Method

  1. Add all the ingredients into the slow cooker pot. Give everything a good stir with a wooden spoon to ensure everything is mixed and covered equally.  

  2. Add dots of butter on top of the red cabbage mixture before putting the lid on. Cook on a low heat for 3 hours, 30 mins until the mixture starts to soften. Remove the lid for the final 30 mins to allow for the liquid to reduce. 

  3. Season with salt and pepper before serving. Once cool, you can keep the mixture covered and chilled for up to 3 days or frozen for up to 2 months. Reheat in a pan over a medium heat until piping hot.
