With its sweet, refreshing flavour, our watermelon sorbet makes for a light dessert or perfect palate cleanser.
All you need is 4 ingredients and can be made with or without an ice cream machine - we use an ice cream machine for extra ease. This watermelon sorbet is ideal for when the weather is too hot and you need to cool down. You can even use it as a base for watermelon margaritas - just add a shot of tequila.
What you'll need...
- 150g golden caster sugar
- 500g watermelon, rind removed and cut into pieces
- 1 ½ limes, juiced
- ½ lemon, juiced
- 2 mint leaves
Method
Put 150ml of water, sugar and mint in a pan and cook for 10 mins or until you’ve created a thick, syrupy consistency. It should coat the back of a spoon. Set aside to cool and remove the mint sprigs.
Add the watermelon chunks, lime and lemon juice in a food blender and blend until smooth. Strain through a fine mesh sieve to remove the pip and for extra silkiness. Take the homemade sugar syrup and stir it into the watermelon mixture.
Add the mixture into an ice cream machine and follow the manufacturer’s instructions.
Once it’s ready to be served, use an ice cream scoop and glasses. Add a sprig of mint if you wish. For iced cocktails, add one or two scoops to a coupe glass and top with sparkling wine or your favourite spirit.
