Warm the milk gently. Add the sugar and yeast to this and stir – set aside to bloom for 10 minutes. Grease and line a 9x13 casserole dish with butter and baking paper.
Sift the flour into a stand mixer bowl with the dough hook and make a well in the centre. Add the bloomed yeast mix and egg and mix on medium speed for 2-3 minutes. Add the butter and continue to mix for a further 5-7 minutes until the dough is stretchy and elastic – cover with cling film and prove for up to 90 minutes until doubled in size.
Whilst the dough proves, prepare your fillings and toppings.
In a saucepan, add your diced apples, sugar and a few tablespoons of water. Place over a medium heat until the sugar dissolves and the apples bubble. Lower the heat and cook for 5-7 minutes, stirring occasionally until soft. Remove from the heat to cool completely.
Mix the cinnamon with the light brown sugar. In a separate bowl, melt the butter in the microwave.
For the crumble topping, preheat your oven to 180C fan. In a bowl, add the four and butter. Rub together until it resembles wet sand, then add the sugar and stir to combine. Spread on a non-stick baking tray and bake for 10 minutes. Use a spatula to turn the mix over and bake for 5 more minutes. Once baked, allow to cool completely.
Once the dough has proved, turn out onto a floured surface and roll into an oblong. Pour over the melted butter and spread over the dough, then spread the apple mix on top of this. Sprinkle over the cinnamon sugar mix and roll the dough lengthways into a sausage shape. Cut into 12 equal pieces and lay them spiral side up in the prepared dish. Cover and prove for another hour.
Preheat your oven to 160C fan.
Once proved, bake your rolls in the centre of the oven for 20-30 minutes until golden brown and cooked through. Set aside to cool completely.
To decorate, place the slices of apple in the spirals of your rolls in a rose design, then brush over the honey mix to glaze. Sprinkle over the crumble topping, getting it into the gaps between each bun.
Serve warm or cold, with custard or on its own.
