What you'll need...
- 1kg stewing beef, cut into chunks
- 1 onion, chopped
- 8 carrots, cut into chunks
- 6 mushrooms, cut into chunks
- 2 tbsp vegetable oil
- 2 tbsp plain flour
- 500ml Guinness (or your preferred stout)
- 1 beef stock cube
- 2 bay leaves
- Sprig of thyme
- Salt and pepper to taste
- Mashed potato, to serve
Method
Preheat the oven to 160C / 140C fan / gas 3.
Heat oil in a large, lidded casserole dish and brown the beef chunks. Sear in batches and avoid overlapping. Once browned, set the meat aside.
Add the carrots, mushrooms and onion to the casserole dish, browning them before sprinkling over the flour. Stir the mixture for even coverage.
Tip the beef and any juices back into the dish and stir. Pour over the stout and crumble in the beef stock cube. Season with salt and pepper. Add the bay leaves and thyme and bring everything to a simmer.
Cover the stew with the casserole lid and place in the oven, allowing it to cook for 2 hrs 30 mins, until the beef is tender.
