These deliciously light and fluffy pancakes will change the way you cook pancakes from here on out. Ready in 10 minutes or less.

Made in the air fryer, load your pancake stacks with your favourite toppings for a truly indulgent breakfast or sweet treat. Air fryer pancakes are an easy way to feed the family on Pancake Day.

What you'll need...

  • 230g self-raising flour
  • 1 ½ tsp baking powder
  • 1 tbsp golden caster sugar
  • 3 medium eggs
  • 200ml milk or plant-based milk
  • 40g butter
  • Pinch of salt
  • Blueberries, add to the batter and some for on top
  • Drizzle of maple syrup
  • Whipped cream, optional

Method

  1. Combine and mix the dry ingredients (flour, caster sugar, salt and baking powder) in a mixing bowl. 

  2. Create a well in the centre of the bowl and add the milk and eggs, whisking together until smooth. Once smooth, pour into a measuring jug. 

  3. Preheat the air fryer to 180C and melt a large knob of butter in the air fryer base. Once the butter looks frothy, pour in the batter, creating multiple small scotch pancakes. Make sure the batter doesn’t spread and touch.  

  1. Cook the pancakes on one side for 2-3 minutes. Flip the pancakes over and cook for another 2-3 minutes or until golden brown and fully cooked through. 

  2. Repeat until all the batter is used up. You can always keep the cooked pancakes warm by placing them in a slightly heated oven. 

  3. Top your stacks of pancakes with your desired toppings. We love adding blueberries to the batter, so they pop and spread when cooking. Drizzle with syrup and a squirt of cream for extra decadence.
