Air fryer corn ribs

Ready in 20 minutes, our air fryer corn ribs turn out deliciously tender corn with crispy brown edges and a hint of spice.

This vegetarian alternative to meaty ribs is not only super easy, but also utterly delicious and makes for a succulent side dish or snack. Corn ribs are the perfect BBQ or summer side dish; each bite is juicy and oozing with spice and flavour.

What makes this dish extra special is that it is so adaptable. Add your favourite spices, top with your preferred cheese and serve with a dip if you desire. What’s more, if you want to make this recipe vegan, swap out the butter with a plant-based butter instead and omit the cheese or use a vegan alternative.

What you'll need...

  • 4 corn cobs, fresh
  • 50g butter, melted
  • 1 tsp smoked paprika
  • 2 tsp garlic powder
  • 1 red chilli, deseeded and finely chopped
  • Juice of ½ lime
  • Pinch of sea salt flakes
  • Pepper, to taste
  • Vegetarian hard cheese, finely grated, for serving

Method

  1. Preheat the air fryer to 200C. 

  2. Using a sharp knife, cut each corn cob in half lengthways, making 2 long pieces. Then, halve each piece again, lengthways, so you have a total of 8 ‘ribs.’ Repeat the process with the remaining corn cobs. 

  3. In a bowl, mix the melted butter with the smoked paprika, garlic powder, lime juice and a pinch of salt and pepper. Add the corn ribs and toss until coated. 

  1. Place the corn into the air fryer, ensuring that they’re in a single layer and not overlapping. Cook for 10 minutes, turn the ribs, then cook for another 10 minutes or until crisp, tender and the edges are slightly charred (this gives extra smoky flavour). 

  2. Remove the corn ribs and top with grated cheese, the chopped chilli and some coriander. Serve alongside the main dish.
