Air fryer courgette fritters

With their crispy outer surface and tender middle, our air fryer courgette fritters are sure to go down a treat with family and friends.

Place in the air fryer and serve alfresco to guests during the summer, as these courgette fritters can be used for build-your-own pitta breads or be placed on top of a fresh, crisp salad.

Truly delicious, our air fryer courgette fritters recipe is easy and perfect for warm, summer days and evenings.

What you'll need...

  • 2 medium courgettes
  • 1 large egg, lightly beaten
  • 60g grated Parmesan cheese
  • 35g whole wheat flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ¼ tsp ground black pepper
  • Dollop of tzatziki, to serve
  • Pitta breads, to serve

Method

  1. Preheat the air fryer to 190C for 10 minutes before coating the fryer basket with cooking spray or oil.

  2. Grate the courgettes on the large holes of a grater into a strainer or sieve places over a clean kitchen towel. Salt the courgette and toss until evenly covered. Place the courgette into a mixing bowl and add the egg, flour, garlic powder, onion powder, Parmesan and pepper. Stir until combined. Shape the mixture into patties, roughly 3 inches wide.

  3. Coat the top of the courgette fritters with cooking spray and arrange them in a single layer in the fryer basket. Work in batches if all the fritters cannot fit. Cook for 8 minutes or until crisp and browned.  

  4. Once all are cooked, serve warm and with a fresh salad, pitta breads and a dollop of tzatziki.
