Cauliflower cheese

Learn how to make cauliflower cheese with our easy-to-follow recipe – a classic comfort food that pairs perfectly with roast dinners.

Whether you’re serving chicken, beef or a nut roast, our cauliflower cheese recipe is creamy, cheesy and has a hint of mustard for subtle heat. Feel free to add sautéed bacon bits or broccoli florets if you desire.

What you'll need...

  • 1 cauliflower head, broken into large florets
  • 40g butter
  • 40g plain flour
  • 400ml milk
  • 2 tsp English mustard
  • 100g mature cheese, grated
  • Salt and pepper, to taste

Method

  1. Preheat the oven to 190C / 170C Fan / Gas 5. 

  2. Wash the cauliflower and place in a large saucepan filled with salted water. Bring to a boil and cook for 3-5 mins, until the cauliflower is almost tender but still firm. Drain by pouring into a colander. 

  3. Time to make the cheese sauce. Melt the butter in a saucepan and stir in the flour. Cook over a gentle heat for 1 minute before removing the pan from the heat. Gradually add the milk, stirring well between each addition.  

  1. Return the pan to a medium heat and bring the cheese mixture to a boil while stirring continuously. Simmer for 2 mins before removing from the heat. Stir in the English mustard and two thirds of the grated cheese. Set aside. 

  2. Arrange the cauliflower florets in an ovenproof oven dish and carefully pour over the cheese sauce, making sure each floret is covered. Scatter over the remaining cheese and bake for 30 mins or until the top is golden brown and the cheese is bubbling. Remove from the oven and serve alongside the rest of the meal.
