Chicken burrito bowl

Whip up this delicious chicken burrito bowl for a healthy lunch or quick dinner. Loaded with avocado, beans and chicken, this dish is high in protein too.

Feel free to customise this chicken burrito bowl with your favourite ingredients. However, we love using chicken, black beans, avocado, homemade tortilla crisps and soured cream. You can also customise the spice levels by adding (or subtracting) jalapeno slices.

We cook our chicken burrito bowl in the air fryer, but it can be cooked in the oven too.

What you'll need...

For the chicken

  • 250g chicken fillets
  • ½ lime, juiced
  • 2 tbsp chipotle paste
  • Cooking oil spray
  • Salt and pepper

For the salsa

  • 4 medium tomatoes, peeled and finely chopped
  • ½ red onion, finely chopped
  • ½ lime, juiced
  • 1 garlic clove, finely chopped
  • Small splash of white wine vinegar

For the tortilla chips

  • 1 large tortilla wrap, cut into triangles
  • ½ tsp smoked paprika
  • Sea salt flakes
  • Cooking oil spray

To serve

  • 1 tin black beans, rinsed and drained
  • 1 avocado, sliced
  • Shredded iceberg lettuce
  • 1 lime, halved
  • Jarred Jalapeno chilli, sliced, optional
  • Cooked rice
  • Grated cheese, optional
  • Sweetcorn, optional
  • Handful fresh coriander, optional

Method

  1. Preheat the air fryer to 180C. 

  2. Cook the rice depending on the instructions provided. If using a rice cooker, make sure you’ve timed things accordingly. 

  3. Mix the chipotle paste and lime juice in a bowl and season with some salt and pepper. Coat the chicken fillets with the paste and spray with cooking oil. Air fry for 10-12 minutes or until the chicken is cooked through. 

  1. Make the homemade salsa by combining the prepped tomatoes, red onion, garlic, lime juice and white wine vinegar in a bowl. Refrigerate until needed. 

  2. Remove the chicken from the air fryer and leave to rest. Add the tortilla triangles to the air fryer (still on at 180C) and sprinkle salt and paprika on top. Spray with the oil and air fry for 5 minutes or until crispy. 

  3. Time to plate up. Load the bottom of the bowls with the rice, shredded lettuce and the black beans. Slice the chicken and divide between two bowls along with the tortilla crisps. Top with jalapenos, salsa, soured cream, lime halves and coriander if using. The great thing about burrito bowls is that you can add your favourite ingredients.
