Smoky coffee BBQ marinade

Homemade always tastes better, and this smoky barbecue marinade proves it. Blending coffee, brown sugar and warming spice, it‘s rich, balanced and gently tangy.

Whisked together in minutes, it’s ready to coat your chosen cut with deep, caramelised character.

What you'll need...

  • 150g tomato ketchup
  • 150ml strong coffee, cooled
  • 50g brown sugar
  • 80ml malt vinegar
  • 2 tsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tsp onion powder or granules
  • 1 tsp garlic powder or granules
  • 1 tsp smoked paprika
  • 1 tsp ground cumin

Method

  1. Whisk all the ingredients together, then pour into a jar to store.

  2. Whatever you’re planning to marinate, season with salt and pepper, then coat well in the marinade. Leave for at least 30 minutes, or ideally up to 24 hours in the fridge, covered.

  3. Remove from the fridge 30 minutes to 1 hour before grilling.
