Festive stuffing with sausage, apple and cranberries

Sausagemeat, apple, cranberries and fragrant sage come together in this flavour-packed stuffing.

Golden on the outside and wonderfully soft within, it's the perfect partner to your Christmas turkey and all the trimmings.

What you'll need...

  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 1 garlic clove, crushed
  • Leaves from 3 sage sprigs, finely chopped, plus a few extra leaves to garnish
  • 100g fresh breadcrumbs
  • 400g sausagemeat
  • 75g dried cranberries
  • 1 large cooking apple, peeled, cored and diced
  • Finely grated zest of 2 clementines or 1 large orange
  • ¼ tsp freshly grated nutmeg

Method

  1. Heat the oven to 180°C/160°C fan/gas 4. Meanwhile, heat the olive oil in a frying pan over a medium heat. Add the onion and garlic and cook for 8 minutes until softened but not coloured. Transfer to a large mixing bowl, stir through the chopped sage and leave to cool.

  2. Add the remaining ingredients and mix thoroughly with your hands until evenly combined. Divide into 6 large or 8 smaller stuffing balls.

  3. Arrange the stuffing balls in a baking dish, leaving a little space between each one. Roast for 25 minutes until golden and cooked through. Garnish with the reserved sage leaves and serve immediately.
