Festive Yorkshire pudding wrap

Crisp, fluffy Yorkshire pudding is wrapped around turkey, stuffing, pigs in blankets and all the trimmings, with rich gravy for dipping.

Perfect for Boxing Day, it's just as delicious filled with leftover beef, chicken or your favourite roast dinner. Comfort food at its festive best.

What you'll need...

For the Yorkshire pudding

  • 70ml whole milk
  • 100g plain flour
  • 2 large eggs
  • Pinch of fine sea salt
  • 25ml vegetable oil

For the filling

  • Leftover roast turkey, shredded
  • Leftover stuffing
  • Leftover pigs in blankets
  • Leftover vegetables, including roast potatoes
  • 2 tbsp cranberry sauce
  • Hot gravy, to serve
  • To make it vegetarian: swap out the meat for vegetarian substitutes like nut roast, vegetarian turkey and vegetarian pigs in blankets.

Method

  1. Whisk together the flour, eggs and salt, slowly incorporating the milk - don’t worry too much about lumps. Cover and chill for 1 hour.

  2. Preheat the oven to 220°C (fan 200°C). 

  3. Pour the oil into an 20cm (8in) square tin and heat in the oven for 5 minutes. Carefully pour in the batter and bake for 25 minutes, without opening the oven door, until puffed and golden. Leave to cool for a few minutes until cool enough to handle.  

  1. Meanwhile, warm the turkey, stuffing, pigs in blankets and vegetables in the microwave or oven until piping hot.

  2. Lay the Yorkshire pudding flat and top with the turkey, stuffing, pigs in blankets, roast potatoes and any remaining vegetables. Spoon over the cranberry sauce, drizzle with a little gravy, then roll up tightly like a burrito. Wrap in greaseproof paper and serve immediately with the remaining gravy for dipping till warm.
