Giant couscous salad with feta and peppers

This super easy couscous salad is utterly delicious and the perfect side dish for dinners and BBQs. It also makes for a tasty and healthy quick lunch.

Full of colourful goodness, our giant couscous is topped with feta, red peppers, cucumber and more, finished with a squeeze of lemon and a sprinkling of parsley. Add a sprinkling of chilli flakes for a subtle hint of heat.

What you'll need...

  • 300g pre-cooked giant couscous
  • 1 jar of roasted red pepper, cut into smaller pieces
  • 80g feta, crumbled
  • 100g cucumber, diced
  • 50g kalamata olives, pitted and sliced in half
  • 1 garlic clove, peeled and finely chopped
  • 1 tsp chilli flakes, adjust to your own taste
  • 1 tbsp olive oil
  • Juice of ½ lemon
  • 1 tbsp red wine vinegar
  • Handful of fresh parsley, roughly chopped
  • Sea salt flakes, to taste
  • Fresh black pepper, to taste

Method

  1. Add the red peppers, cucumber, garlic and olives to a bowl and add the olive oil along with the parsley, lemon juice and red wine vinegar. Mix well. Add the chilli flakes and salt and pepper before stirring again. Leave to marinate for 30 minutes to 1 hour.  

  2. Heat a frying pan or sauté pan over a medium heat and add a tbsp of olive oil. Add the pre-cooked giant couscous and toast until they turn slightly golden. Boil water in the kettle and add enough to cover the couscous and leave to simmer for 10-12 minutes. 

  3. Drain the couscous then tip into the bowl of peppers, olives, etc and mix until combined. Crumble the feta on top and gently stir through. Add a sprinkling of extra salt and pepper if desired. 

  4. Serve from a serving bowl or platter and enjoy!
