Greek potatoes with lemon and garlic

Bring the taste of the Mediterranean to the table with our Greek potatoes with lemon and garlic.

With their beautifully fresh and herby flavours, these golden Greek potatoes are perfect when served alongside lamb kleftiko but also makes for a tasty summer side dish in general.

What you'll need...

  • 900g Maris Piper or King Edwards potatoes, chopped
  • 1 garlic bulb, sliced in half horizontally
  • 1 lemon, halved and finely sliced
  • 1 red onion, thickly sliced
  • 4 bay leaves
  • 3 tbsp olive oil
  • Handful fresh thyme, roughly chopped

Method

  1. Preheat the oven to 210C / 200C fan / gas 7. 

  2. Toss all the ingredients (minus the herbs) together in a mixing bowl. Season with salt and pepper.  

  3. Spread the potatoes out onto a large roasting tin and roast in the oven for 50 mins, stirring halfway through.  

  4. Remove from the oven and sprinkle with the fresh thyme. Season with sea salt and freshly ground pepper if you wish and to your taste. Serve with your main dish (pairs beautifully with our kleftiko).
