Loaded hot dogs

These loaded hot dogs will be the talk of your next barbecue. Braise sausages in beer and load them up with caramelised onions and melted cheese for a truly epic hot dog.

Serve with your favourite summery side dishes. We love potato salad and a fresh tomato and burrata salad.

What you'll need...

  • 2 tbsp salted butter
  • 1 tbsp olive oil
  • 3 onions, finely sliced
  • 3 thyme sprigs
  • 330ml beer, enough to cover the sausages
  • 6 hot dog sausages
  • 6 hot dog rolls
  • 6 tbsp crispy shallots
  • 50g cromté cheese, grated
  • Salt and pepper

Method

  1. To make the lyonnaise onions, melt the butter in a large saucepan over a low heat. Add the oil, onions, thyme and a pinch of salt, then cook gently for 45–50 minutes, stirring regularly, until soft, golden and caramelised. Season to taste and remove the thyme sprigs.

  2. Heat a large, high-sided frying pan (large enough to hold the hot dogs flat) over a medium heat. Add the sausages and pour in enough beer to just cover. Simmer gently for about 10 minutes until the sausages are piping hot.

  3. Place the sausages into the rolls, then top with the onions, crispy shallots and grated comté. To melt the cheese, place under a hot grill until bubbling.
