Panettone bread and butter pudding

Soft slices of panettone are baked in a rich vanilla custard with dried fruit until golden and lightly crisp on top.

This panettone bread and butter pudding is a wonderfully indulgent dessert that's perfect for sharing over the festive season. Serve with a helping of brandy butter.

What you'll need...

  • 1 tbsp butter, softened, for greasing
  • About 500g panettone, cut into slices
  • 75g dried fruit, such as raisins, sultanas and cranberries
  • 2 medium free-range eggs, plus 6 medium free-range egg yolks
  • 500ml milk
  • 375ml single cream
  • 2 tsp vanilla extract
  • 55g caster sugar, plus 1 tbsp extra for sprinkling

Method

  1. Lightly grease a 2.5-litre ovenproof dish with the butter. Arrange a layer of panettone in the dish, scatter over some of the dried fruit, then repeat until both have been used.

  2. Whisk together the eggs, egg yolks, milk, cream, vanilla and sugar until combined. Pour over the panettone and leave to soak for 30 minutes, gently pressing the bread into the custard every 10 minutes. Sprinkle over the remaining tablespoon of caster sugar. Meanwhile, heat the oven to 180°C/160°C fan/gas 4.

  3. Bake for 40–45 minutes until the custard is just set and the top is golden brown. Leave to rest for 10 minutes before serving with a little extra cream, if desired.
