Pigs in blankets - 3 ways

Three simple twists on a Christmas classic. Choose from sweet and sticky maple and mustard, fiery hot honey or crisp apple and sage for pigs in blankets that are guaranteed to be the first to disappear.

What you'll need...

Base recipe

  • 24 pork chipolatas
  • 24 rashers streaky bacon

Maple and mustard

  • 4 tbsp maple syrup
  • 2 heaped tbsp wholegrain mustard

Hot honey

  • 4 tbsp runny honey
  • 1 tsp dried chilli flakes
  • 2 tsp red wine vinegar

Apple and sage

  • 2 medium cooking apples, peeled, cored and thinly sliced
  • 24 sage leaves
  • 100g panko breadcrumbs
  • 50g light brown sugar
  • 3 tbsp olive oil

Method

  1. Preheat the oven to 200C/180C fan/gas 6.

  2. Maple and mustard: Wrap each chipolata tightly in a rasher of streaky bacon and arrange on two lined baking trays. Bake for 15 minutes. Meanwhile, mix together the maple syrup and mustard. Remove the pigs in blankets from the oven, toss with the glaze, then return to the oven for 10 minutes until golden, sticky and cooked through.

  3. Hot honey: Wrap each chipolata tightly in a rasher of streaky bacon and arrange on two lined baking trays. Bake for 15 minutes. Meanwhile, mix together the honey, chilli flakes and red wine vinegar. Remove the pigs in blankets from the oven, toss with the hot honey glaze, then return to the oven for 10 minutes until golden, sticky and cooked through.

  4. Apple and sage crispy pigs: Place a sage leaf and one or two thin slices of apple against each chipolata, then wrap tightly in a rasher of streaky bacon. Mix together the panko breadcrumbs, brown sugar and olive oil until evenly combined. Roll each pig in blanket in the crumb mixture, pressing gently so it adheres. Arrange on two lined baking trays and bake for 20-25 minutes until golden, crisp and cooked through.
