Spring chicken gnocchi soup

Ready-made gnocchi makes our spring-inspired soup quick and easy. Leeks, carrots and poached chicken mingle with caraway, garlic and dill for a bright, aromatic broth.

Light, comforting and full of fresh flavour, this easy soup is made with tender chicken, vegetables and fragrant herbs. Using shop-bought gnocchi as a simple shortcut, it’s a bowl that tastes like spring with very little effort.

What you'll need...

  • 1 tbsp olive oil
  • 1/2 tsp caraway seeds
  • 1 medium leek, cut into 1cm slices
  • 2 garlic cloves, sliced
  • 1 litre chicken stock
  • 1 carrot, cut into 5mm slices
  • 2 chicken breast fillets
  • 200g gnocchi
  • 10g dill, leaves chopped

Method

  1. Heat the oil in a large pan, add the caraway seeds and sizzle for 1 minute. Add the leek and garlic and cook for 10 minutes until softened, then pour in the stock and bring to a gentle simmer. Add the carrot and chicken and cook gently for 18–20 minutes until the chicken is cooked through.

  2. Lift the chicken onto a board and shred with two forks, discarding the skin. Return the chicken to the pan, add the gnocchi, cover and simmer for 1–2 minutes until heated through.

  3. Season to taste, stir in most of the dill and serve topped with the remaining dill and plenty of black pepper.
