Tex-Mex beef burritos

A hearty and filling Tex-Mex classic perfect for feeding a hungry crowd.

These burritos are a complete meal in a wrap. The addition of potatoes adds a rustic texture that pairs perfectly with the spiced beef and beans. For a crispier finish, you can remove the foil for the last 5 minutes of baking.

What you'll need...

For the burritos

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 350g potatoes, peeled and finely chopped
  • 500g beef mince
  • 2 fresh jalapeño chillies, chopped
  • 400g mixed beans in mild chilli sauce
  • 8 large flour tortillas
  • 175g Cheddar cheese, grated

To serve

  • Thick salsa
  • Soured cream

Method

  1. Preheat the oven to 180ºC (160ºC fan). Grease a large baking dish with a little oil.

  2. Heat oil in a large frying pan and cook the potatoes over high heat for 5 minutes. Stir in the onion and cook for another 5 minutes. Add the beef and chillies and cook for 5 minutes more. Stir in the beans, salt, and pepper. Bring to a boil then simmer for 5 minutes.

  3. Divide the mixture between the tortillas, sprinkle with cheese, and roll up, tucking the ends in. Place seam side down in the dish and cover with foil.

  4. Bake for 10-12 minutes until heated through. Serve with salsa and soured cream.
