Butternut squash mac and cheese

Butternut squash adds an extra depth of flavour to the beloved mac and cheese, a comforting family meal everyone knows and loves.

This vegetarian-friendly dish is perfect for those cosy nights in when you want a rich, cheesy dish that’ll leave you feeling satisfyingly full. Full of roasted butternut squash, cheesy-goodness and a bubbling, golden brown top, this meal will become highly requested from family and friends. We love to serve our butternut squash mac and cheese with homemade cheesy garlic bread.

What you'll need...

  • 1 large butternut squash, peeled and cut into 1-inch pieces
  • 2 tsp olive oil
  • 350g macaroni
  • 60g butter
  • 50g plain flour
  • 500ml milk
  • 200g cheddar cheese (we love extra mature)
  • 60g vegetarian parmesan, grated
  • 1 tsp English mustard, optional
  • Salt and pepper, for seasoning

Method

  1. Preheat the oven to 220C/200C fan/gas 7. 

  2. Toss the peeled and chopped squash in olive oil and salt and pepper. Roast for 20 minutes or until tender. While roasting the butternut squash, cook the macaroni pasta by following the pack’s instructions. 

  3. Take a saucepan and melt the butter and stir in the flour and mustard until you make a paste. Gradually whisk in the milk until the sauce starts to thicken; stir constantly to ensure that the sauce is smooth with zero lumps. 

  1. Take the squash out from the oven and mash half of the squash with a potato masher. Remove the sauce from the heat and stir in the mashed squash with the grated cheddar cheese and half the parmesan until the cheese is melted. 

  2. Drain the macaroni and pour into an ovenproof dish with the remaining squash. Pour in the cheese sauce and stir to ensure even coverage. Season and top with the remaining parmesan and bake in the oven for 15-20 minutes or until golden brown on top and bubbling. For some added crunch, you could always sprinkle some breadcrumbs on top. Serve from oven to table and with a side of garlic bread.
