Curried parsnip and apple soup

Our curried parsnip and apple soup will warm you from the inside out with its lightly spiced flavours.

Easy to make, this soup is not only warming but also deliciously creamy and sure to be a hit this winter. You can either serve our curried parsnip and apple soup as a starter or light lunch or dinner. Also pair this soup with fresh, crusty bread.

What you'll need...

  • 15g butter
  • 1 tbsp olive oil
  • 2 garlic cloves, peeled and chopped
  • 2 onions, peeled and chopped
  • 1 tsp grated fresh ginger
  • 1 tbsp mild curry powder
  • 1 tsp turmeric
  • 500g parsnips, peeled and chopped into chunks
  • 1 Bramley apple, cored, peeled and chopped
  • 800ml vegetable stock
  • 1 tbsp crème fraiche
  • Salt and pepper to taste

Method

  1. Heat the butter and oil in a large saucepan or stock pot over a medium heat, and once melted, add the garlic, onion, ginger, turmeric and curry powder. Allow the spices and onion to fry for a few minutes, stirring occasionally to avoid sticking to the bottom of the pan. 

  2. Add the apple and parsnip to the pan and cook for 2-4 minutes, stirring occasionally. Pour in the vegetable stock and bring to a simmer. Allow it to simmer for 1 hour or until the parsnips are tender. Feel free to season with salt and pepper. 

  3. Pour the contents of the parsnips and onion mixture into a food processor or blender and blend and pulse until smooth. 

  1. Empty the pureed mixture back into the saucepan or stockpot and gently heat up before serving. 

  2. Serve with a swirl of crème fraiche on top for added creaminess, season with salt and pepper and pair with crusty bread.
