Easter nests

Who doesn’t love chocolate cornflake cakes? Get the whole family in the kitchen and whip up these delicious, chocolatey Easter nests for all to enjoy.

Our cornflake cakes recipe is a great way to get the kids involved, although these tasty treats can be enjoyed by everyone, no matter their age. Perfect for parties or add Mini Eggs on top to turn them into nests for Easter time. Make vegan chocolate cornflake cakes by using vegan chocolate and vegan butter.

What you'll need...

  • 100g chocolate (milk or dark is fine)
  • 50g butter, melted
  • 2 tbsp cocoa powder
  • 3 tbsp golden syrup
  • 100g cornflakes
  • Mini eggs, for topping

Method

  1. Line the 12 hole cupcake or muffin tin with cupcake cases. 

  2. Break the chocolate and place in a heatproof bowl. Add the butter, cocoa powder and golden syrup. 

  3. Simmer water in a saucepan and place the bowl on top, making sure the bottom doesn’t touch the simmering water. Stir until the chocolate and butter mixture is melted and glossy. Remove from the heat. 

  1. Tip the cornflakes into the chocolate mixture and gently mix together until evenly coated.  

  2. Use 2 spoons to divide the mixture between the cupcake cases and place 3 Mini Eggs in each cupcake so they resemble nests. Place in the fridge to set (this can take at least an hour).
