Strawberry sandwich (strawberry sando)

Inspired by the Japanese strawberry sando, our strawberry sandwich is moreish and balances sweet and savoury for a unique taste sensation.

Perfect for lunches or when you’re in need of a slight sweet treat, the strawberry sandwich combines light, whipped cream, white or milk bread and juicy strawberries. The combination of pillowy, white bread with lightly sweetened cream and strawberries is sure to surprise and impress your taste buds, converting you to this Japanese convenience store classic.

What you'll need...

  • 150ml double cream
  • 1 tbsp icing sugar
  • 1 tsp vanilla extract
  • 8 slices of soft, white bread
  • 450g strawberries, hulled and halved

Method

  1. To make the whipped cream, combine the double cream, icing sugar and vanilla extract in a bowl and use an electric whisk to whip the cream. Ideally, the cream will be in-between stiff and soft peaks, and slightly airy.  

  2. Arrange the bread slice and spread the whipped cream onto each slice. Place the halved and hulled strawberries, cut side down, over the cream – only do this on half the bread slices. Take the remaining bread slices and gently sandwich together. 

  3. You can either cut the crusts off the strawberry sandwich (it’s traditional for them to be crustless) or leave them on if you desire. Halve the sandwich along the middle to create triangles. Eat and enjoy straight away.
