BLT pasta salad

An easy pasta salad inspired by the beloved BLT sandwich, it’s perfect for lunch boxes, picnics or a quick, light summer dinner.

This BLT pasta salad is made with crispy bacon, sliced tomatoes, lettuce and your choice of pasta tossed in a creamy mayo dressing. You can adapt the recipe how you wish, whether it’s by adding chopped red onion, a spoonful of mustard or a handful of spinach - our BLT pasta salad recipe is easy to transform into your preferred dish while keeping the core components.

What you'll need...

  • 300-400g dried pasta
  • 4 rashers of bacon
  • 4 Roma tomatoes, diced
  • ½ red onion, diced
  • ½ head romaine lettuce, shredded
  • 200g mayonnaise
  • Salt and pepper, to taste

Method

  1. Cook the dried pasta by following the package instructions. Once cooked, run under cold water to cool and leave to drain in a clean colander.  

  2. Cook the bacon in a frying pan or skillet over a medium heat until crispy. Remove from the pan and place on a stack of paper towels and gently pat dry, removing excess oil and grease. Chop and cut the bacon rashers into smaller pieces. 

  3. Prepare the tomatoes, red onion and lettuce by shredding and dicing them into smaller pieces. If you’re adding a tsp of mustard to the mayo, mix in a bowl until combined. 

  4. Pour the cooled down pasta into a serving bowl and add the tomatoes, red onion, lettuce, bacon and mayo. Stir everything together. Allow to sit for 5 mins before serving.
